Salt, paprika, black pepper, white pepper, chinese 5 spice, garlic powder, ginger powder

I think that was all

Lots of all of them, especially salt and white pepper

Uncovered, crackling side up in the fridge overnight

See if I can both get crackling right and have the meat right
