What are you havin for dinner?

I made homemade mater soup this morninP1510870.webpP1510871.webp

I was gettin an excess of maters and already have 4+ cases of maters canned up for winter so decided to make mater soup, I love mater soup and can not have the store bought cans, even the organic ones are bad for me because of the spray liner inside the can. So I have learned to make my own. When I make my own it tastes soooo much better too, I always add organic spices and garden onion and red bell peppers, also like to throw a few jalapenos in. This soup is thick, tasty, and totally organic.

Experts Caution Against Using Air Fryers Instead of Ovens

Starting to think about Thanksgiving, and this is just a small thing, but a new tradition.

One year when my niece was tasked with the turkey, I told her to forget it, that nobody wants to prep, cook and carry that bird, and nobody would expect her to do it. We eat tamales as the main dish now, for many years, and sometimes you do find turkey tamales in the stores. Those who really want a bite of bird can make some wings or a roast turkey breast, either of those with herbs, oven time and love.

But the next question: Do we want cranberry sauce jelly that slides out of a can, or cranberry sauce with visible berries. I told her that some traditions are outdated in a good way, still worth the trouble, and some are just worn out. I pointed out to her that the stores have five flavors of hot pepper jelly, from mild to stinging, and none of them as good as her own homemade, which is at the perfect center of sweet-hot. We now find that pepper jelly is the perfect sauce for a bite of bird, or for a tamale, or as a topping for sweet potatoes.

Spaghetti carbonara is back in my life. I totally quit any kind of pork product a while back, bacon, ham, etc., because I have read several sources that say there is no cooking heat high enough to kill the parasites that are in it.

Turkey pepperoni. Love the stuff. Chop it up for the carbonara dish, or lay the circles on your pizza. It doesn't drip loads of grease the way regular pepperoni does. Very tasty.

When you have fresh bread you have to eat it soooo... How about a BLT!

I get fully cooked turkey bacon. Tastes the same, texture is same. Heats up in moments in the oven, then you blot off the grease.

Godshall's has something they call "beef bacon" but it doesn't taste like bacon at all.

BLT, fave sammy.

Sorry, but as Emeril Lagasse says "Pork Fat Rules!"

I spent 7 weeks in Singapore on a business trip. The suite hotel I was staying at always had fake bacon for breakfast as lots of Muslims stayed there. Since my room had a kitchen and there was a grocery store near by I bought some real bacon to cook in my room. The fact that real bacon smell made it's way into the hallway did not bother me... I could never be Muslim or Jewish because of my taste for pork dishes.

Monday is all better now.

I wish I could just enjoy the abundance of groceries without worrying about expiration dates. I've been storing less prepper food in the past year. It feels like a relief. If I starve to death in a grid down situation or the cutoff of supply chains, then fine, I die. Worse things could happen.

I found an amazing product. I don't use the word "amazing" easily. This stuff is intense. The only ingredient listed on the label is "organic banana". Not even water or any kind of preservative.

So after trying it once, I bought another can to try making a low calorie banana shake. Heavy whipping cream is only 52 calories per tablespoon, and a little goes a long way. I considered adding a glug of dark chocolate syrup, but no it doesn't need it. Maybe next time.

Next, a 14.5 oz. can of fire roasted tomatoes on its way to its expiration date, undrained, combined with some of said cream, and the lovely farmers market rosemary and thyme that have been holding up so nicely in the fridge, salt and a generous grind of peppercorns. And a Cheesecake Factory roll I brought home from dinner last night, which I split open, buttered, melted on some cheese with some of those herbs.

I don't want a styrofoam container for bringing home leftover bread from restaurants. If you ask, the waiter can usually bring you a piece of foil or wax paper. I've gotten into the habit of keeping a ziploc baggie in my purse just in case.

Bon appetit.
