That's not salmon. That's paste printed to look like it.
Steakholder Foods launched Perfecta on September 3 in some Northeast grocery stores through KeHE Distributors. The line includes marbled steak, filet mignon, chicken breast, salmon patties and whitefish patties, all built layer by layer by a printer.
The "salmon" patty has no fish in it at all. It's soy protein, rice flour, potato starch, and methylcellulose to hold it together. One 50 gram patty has 4 grams of protein.
A real Atlantic salmon fillet has about 20 grams of protein per 100 grams and one ingredient you can recognize. No paste. No binder you have to google.
Their machines are called Fused Paste Layering and Drop Location in Space. They can push out hundreds of kilos an hour. That's not a fisherman. That's a factory.
I want food my family can recognize and actually eat. That's why 70 percent of us look for recognizable ingredients and 85 percent say whole-food protein is healthier and more satisfying. If you want to spot it, look for Perfecta in the plant-based case. If it says salmon patties but the ingredient list says soy and methylcellulose, that's the printed one.
Call it what it is. Don't print a fish you never caught.

4 companies have a monopoly on our beef supply. All of them are investing into lab grown meat.
Tyson, JBS, Cargill & National Beef supply majority of the stores, restaurants, and distributors. Together, they completely dominate the U.S. beef market, controlling ~85% of all beef in the country. That’s an estimated 22 billion pounds of beef a year & 60 million pounds every single day.
They’ve invested alongside billionaires such as Bill Gates into multiple lab grown meat, fish, and chicken companies since the beginning. JBS even owns the largest lab grown meat production facility in the entire world.
With their investments, we’ve seen lab grown products receive federal approval, appear on shelves, and on menus.
They won’t label it lab grown.

Five High-Alert Action Items to Accomplish Before...

Five Urgent Items as World Situation Worsens + Interview on Permaculture Wisdom for Home-Grown Food

The global infrastructure for energy, fertilizer and transportation is worsening rapidly. Today I've put together an action alert collection of five urgent items you need to nail down before the end of 2026 (they're important).

If you cover these five things (and you probably already have at least some of them covered), you'll be well-prepared for the worsening energy shock, higher food prices and supply chain uncertainty that will arrive in 2026.

Find my analysis video and today's interview with a permaculture home food production expert here.

Two topics today that turned out to have more research behind them than we expected.

First: if you've been dragging yourself through the week, snapping at people you love, and telling yourself "it's just work stress," there's a question worth sitting with. Is it actually burnout, or has it quietly turned into something that needs a different kind of attention? The two get mixed up constantly because they share symptoms like exhaustion and trouble focusing, but one tends to lift the moment you're away from your job, and the other follows you everywhere, including the vacation that was supposed to fix it.

We broke down how clinicians actually tell them apart here

Second, and this one sounds a little unusual at first: dermatologists have been circling the idea since the 1930s that gut health and skin breakouts are connected, and recent gene-sequencing studies have finally given it real teeth. The bacteria living in your gut, and even the shape and consistency of your stool, correlate closely with stubborn acne and rosacea that never responds to another new cleanser.

We walked through what the research actually shows, including what the Bristol Stool Scale can tell you, in this piece

Curious which one lands closer to home for you right now, the burnout question or the skin one. Hit reply and let us know, or drop a comment on either article. And if someone in your life has been dealing with either of these, feel free to pass this along.

When it comes to healthy habits, consistency often matters more than perfection :)

Did you know drinking olive oil before bed may offer unique wellness benefits?

Research shows olive oil supports heart health, digestion, inflammation control, and healthy metabolism. It also contains melatonin and polyphenols – compounds that may improve sleep quality and help regulate blood sugar and appetite.

While evidence around timing is still evolving, many people enjoy half to one tablespoon nightly, either plain or mixed with food.

Food sensitivities aren’t always caused by food. They often begin with your microbiome and gut barrier.

Your intestinal lining is only one cell thick, and its job is incredibly precise: allow digested nutrients into the bloodstream while keeping bacteria, toxins, and large food particles out.

When your microbiome loses diversity and your gut barrier becomes compromised (often called leaky gut), partially digested food proteins slip through the gaps into your bloodstream. Your immune system sees these proteins as a threat, so it mounts an attack.

Over time, that repeated immune activation can lead to:

  • Chronic inflammation, which can affect joints, skin, energy levels, and even mood
  • Loss of immune tolerance, where your body begins flagging harmless foods as dangerous
  • Heightened immune sensitivity, leading to stronger reactions to foods you once tolerated
  • Chronic sympathetic nervous system activation, leading to poor digestion and detoxification (as well as feeling increasingly anxious, often accompanied by sleep issues)
  • Expanding food reactions, despite carefully eliminating known triggers
The more compromised your gut-immune function is, the more foods you react to. You can avoid gluten, dairy, and eggs all you want, but if your gut-immune-nervous system axis is still compromised, new sensitivities will keep developing.

That’s why my colleague and integrative health expert Jason Prall is hosting the Food Sensitivity Summit, where leading experts will show you exactly how to end the cycle of food restriction.

During the summit, you'll discover:

  • What breaks down the gut barrier in the first place
  • The functional tests that reveal why your gut may be compromised
  • Nutrients that support gut barrier integrity and restore immune regulation
  • Innovative therapies that reduce permeability and help restore the physical structure of the gut lining
  • How nervous system dysregulation keeps your gut barrier compromised (and what to do about it)
  • Strategies to improve microbiome diversity so you can reintroduce foods safely

Well, as proud as I am of my German last name and heritage, Jim…

Teddy’s a quarter Japanese, making our kids an eighth Japanese, so I’ve sort of adopted an interest and appreciation in that culture as well…

and I must admit, knowing what I know, that between the two, the Japanese likely have the healthier diet!

(Traditionally anyway, before the whole world became corporatized.)

Although the Germans are of course known for their love of sauerkraut, so they’ve got that going for them (but then the Japanese also have their kimchi)

I REALLY enjoyed going through this 👉 The Five Components Of Heart Healthy Diet in Japan ebook, my friends at Zonia put together for their new HEARTproof event coming up.

Lots of great reminders and tips on incorporating super nutritious elements into your diet you probably wouldn’t think of otherwise in general.

And of course, with all the similarities between both causative factors of cancer and heart disease, and what works to reverse them, you could replace “Heart Healthy” with “Anti-Cancer” in that title and the book would still be 100% accurate.

They talk about the fucoidan in seaweed being amazing for heart health, for instance…

which brought back memories of us getting Ryder on a fucoidan product for much of the early cancer journey!

Not sure why I forgot about that one / wonder if it’s still around. :)

And of course there's the fact that heart attack is the number one killer of people going through cancer, aside from cancer, and these folks are way more likely to have heart issues than non-cancer people…

so lots of reasons to be taking “heart health” measures.

But at the end of the day, like I said, just a 👉 practical little book with lots of great tips on incorporating things you likely wouldn’t have otherwise!
